Chicken Enchilada Soup
It was Ben’s birthday today and we always let our kids pick what they eat for their birthday dinner. He loves Chili’s and he loves this soup! Ben claims that it tastes just like Chili’s.
Chicken Enchilada Soup Ingredients:
1 Rotisserie chicken
1 Tablespoon vegetable oil
1/2 cup diced onion
1 clove garlic, minced
1 quart chicken broth
1 cup masa harina
3 cups water
1 cup enchilada sauce
2 cups shredded cheddar cheese
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
Chicken Enchilada Soup Directions:
- Cook onion and garlic in oil until onions are translucent. Pour in chicken broth.
- In a bowl, whisk together masa harina and 2 cups water until well blended.
- Pour into pot with remaining 1 cup water, enchilada sauce, cheddar, salt, chili powder and cumin. Bring to boil.
- Shred cooked chicken and add it to the pot. Reduce heat and simmer 30 to 40 minutes, until it thickens.
*Masa Harina: is a type of traditional flour used in Mexican cooking.
Never had an enchilada before, so maybe it would be worth a try in soup form. 🙂

It is a traditional Mexican flour. It is in a bag like any other flour. I found it in the flour section at WalMart.
What a unique soup. Lovely tradition to let them pick their birthday meal.
