Chicken Taquitos

Mexican is my go to this week. Chicken Taquitos are amazing, they are easy and these I made low fat. They were delicious!

I guess we’re on a Mexican kick. I feel like these recipes are easy to make low calorie and low fat and still be delicious. We swam all day yesterday and so this was an easy recipe to throw together at the end of the day.

I did make my own corn tortillas because I think they roll best without cracking, even though some of them still did crack a little bit. These were so good, I will definitely be making them again and even trying to figure out how to freeze them so I can meal prep them for busy days during the school year. 

 

 

Chicken Taquitos

Ingredients

  • 3 boneless skinless chicken breast
  • Cattleman’s Taco seasoning
  • 2 cups chicken stock
  • 6 ounces laughing cow lite cheese, softened
  •  cups shredded low fat Mexican blend cheese
  •  cup light sour cream
  • 1 cup of canned corn, drained
  • salt and pepper to taste
  • 12 (6-inch) corn tortillas (or flour tortillas)
  • vegetable oil spray

 

Chicken Taquitos

directions

  1. Season chicken breasts with taco seasoning, until coated and place in the crockpot. pour in the chicken stock around the chicken.
  2. Cook on low for 2 to 3 hours, until internal temperature is at 165 degrees. Pull out, allow to rest for 5 minutes and then using a mixer shred the breasts.
  3. In a large bowl mix chicken, laughing cow cheese, cheese, corn, and ⅓ cup sour cream. Add salt and pepper and maybe a little more seasoning.
  4. Add a few tablespoons of chicken/cream cheese mixture to the center of a tortilla and spread out and seal with a little flour water mixture.
  5. Preheat the air fryer to 400°F. Place the taquitos, seem side down, in the air fryer basket. Make sure they are not touching and spray with a light coating of cooking spray. Cook for about 3 minutes flip and cook for another 3-4 minutes or until lightly brown and crisp.
  6. Serve with sour cream, guacamole and pico de gallo.
