Coconut Lime Bars
They might appear to be lemon bars, but I assure you, they are not. I just don’t like using food coloring, so these Coconut Lime Bars are yellow!
I knew you’d be cool with that. I’ve been using Organic Coconut Oil to replace vegetable oil and shortening for a while now, and I love the extra flavor and health benefits it has.
Now don’t go crazy and think that these are healthy now that they have coconut oil.
They are just a little bit tastier and less processed. They are still full of sugar though and are perfect for a tasty treat.
Coconut Lime Bars
INGREDIENTS
Coconut Lime Bars Crust
3/4 cup of butter
3/4 cup of Coconut Oil
2 1/4 cups of flour
1/2 cup of powdered sugar
Filling:
4 eggs
2 cups of sugar
6 T of Lime juice
1 t. Lime zest
4 T. flour
1 t. baking powder
Coconut Lime Bars
DIRECTIONS
Preheat oven to 350 degrees. Put butter and coconut oil in mixer bowl and beat until softened and combined. Add flour and powdered sugar and mix on low speed until just combined.
Spread dough evenly in a 9×13 pan. Bake for 10 minutes or until the corners are light golden brown. Remove from oven and pour filling on top of the crust. In a small mixing bowl, mix together eggs, sugar, lime juice, lime zest, flour, and baking powder with a wire whisk or on low-speed of a mixer for just a few minutes.
It is important not to mix a lot of air into the filling. Pour on top of partially baked crust and bake for 30-35 minutes. Allow to cool slightly and dust with powdered sugar. Cut into small bars. Makes 18-24 squares. Chewy and gooey and oh so yum!

Jessica, have you heard of/been experimenting with green stevia (yet)? This might be one of those recipes where it could work! (or at least partial sugar replacement with the green stevia).
