I apparently didn’t know the difference between macaroons and macarons. In my defense when you google macaroon, both come up. I didn’t even know about this coconut option until a couple weeks ago and I wanted to try to make them, and let me tell you they are way way easier to make then French Macarons.

I was dying when I was thinking about making them because last time I tried to make macarons they failed miserably. I’m going to try and make my own recipe next week and see if I can make my macaron dreams come true. We’ll see how that goes. Anyways, this was great and easy and delicious!

Coconut Macaroons

Ingredients

  • 14 oz bag sweetened, flaked coconut
  • 14oz can sweetened condensed milk you will leave about 2 tbsp in the can
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1/2 tsp salt
  • 1 1/2 cups semisweet chocolate chips

Coconut Macaroons

Directions

  1. Preheat oven to 325 degrees F. 
  2. Combine *almost* the entire can of sweetened condensed milk (leave about 2 tablespoons in the can) with coconut. Stir to combine. Add in vanilla and stir to combine. Set aside. 
  3. Next, in a separate bowl combine egg whites and salt and beat until soft peaks form.
  4. Gently fold egg whites into coconut mixture. 
  5. Then scoop or spoon mixture, about two tablespoons, onto baking sheets that are covered with parchment paper or silicone baking mats. 
  6. Finally, bake for approximately 25 minutes or until starting to turn golden brown. Remove from oven, then immediately remove cookies from baking sheet and transfer to a wire rack to cool completely. 
  7. Once they are cool, melt the chocolate chips in the microwave at 30 sec intervals until they are completely melted. 
  8. Then dip the macaroons in the chocolate chips and set on parchment paper to cool, I put mine in the fridge so they could completely cool.
