Crockpot BBQ Loaded Potato Soup
This time of year with fall in the air makes me crave comfort food. A nice warm bowl of soup makes it feel like home! Okay, I love potatoes and crunchy bacon and this soup has a great mixture of flavors, you won’t be able to stop saying YUM!
Its really easy because you throw it in the crockpot in the morning and your on way. When your kids start asking what’s for dinner?, Dinner is served!
Crockpot BBQ Loaded Potato Soup Ingredients:
6 large potatoes peeled and cut into cubes
1 cup onions, diced
4 cups chicken broth
2 cloves garlic, minced
1 Tablespoon BBQ seasoning
1/4 cup BBQ sauce(just use your favorite kind)
1 cup heavy cream
1 cup cheddar cheese
1 pound of bacon cooked and crumbled
Directions:
- Combine potatoes, onions, chicken broth, garlic, BBQ seasoning, and BBQ sauce in your crockpot. Cook on high for about 4-5 hours or low for 6-8 hours.
- Mix in the the bacon, heavy cream and cheddar cheese to the soup mixture.
Garnish with a dab of sour cream and green onions! Dig in!!
You can bake your bacon for your soup!
- Line a cookie sheet with tin foil. Spread out the bacon on the sheet and then place pan in the oven. Turn the oven on 400 degrees at that time. Cook for 20 to 25 minutes.
