Crockpot Potato Soup
With the weather like it is Crockpot Potato Soup is good for the soul and your warmth!
It’s so cold this week! Soup is always a perfect thing to eat when it’s this cold outside! I love a good potato soup, with the kids being extremely picky this week I thought I’d puree the soup so that they wouldn’t see the chunks. Let’s just say they wouldn’t even
try it. Just because it failed the kids does not mean it failed with me and Matt. We really enjoyed this soup and would definitely make it again!
Crockpot Potato Soup
Ingredients
- 2 tablespoons olive oil
- 1 cup yellow onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cups potatoes, chopped into 1 inch pieces
- 4 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon rosemary
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup cheddar cheese
- 2 cups milk
Crockpot Potato Soup
Directions
- In a sauté pan, heat olive oil. While oil is heating, chop veggies.
- Sauté onions, carrots, and celery until onions are translucent, about 10 minutes.
- Add all ingredients into the crockpot, except the milk and cheese.
- Set the crockpot on low for 8 hours or high for 6 hours.
- Once cooked stir in milk and cheese. Use an immersion blender or a regular blender make the soup smooth. Serve with any toppings you like, we used bacon and more cheese obviously.
