Crockpot Thai Peanut Chicken
With this softball season in full swing and the end of school coming to an end, I am all about the easy
crockpot dinners. Matt has been really busy with school work and projects or I know he would cook.
With the crockpot, I can throw it in before I leave for school or come home during lunch and put it in the crockpot. Then we come home, food is ready!
My brother Zac always makes fun of me because I don’t branch out, but he introduced me so Thai food and I really like it. In fact, I introduced Matt to it and now we can’t enough.
Crockpot Thai Peanut Chicken
Ingredients
2 pounds of skinless chicken breasts
1 red bell pepper sliced
1 orange bell pepper sliced
1 white onion chopped
1 cup chunky peanut butter
2 tablespoons lime juice
1 cup chicken broth
1/2 cup soy sauce
1/4 cup of honey
Crockpot Thai Peanut Chicken
Directions
1. Put the onions and peppers in the crockpot, place the chicken on top.
2. Whisk together the peanut butter, lime juice, chicken broth, soy sauce, and honey. Dump on top of the chicken.
3. Cook on low for 6 hours.
4. Pull out the chicken and shred it. Serve with rice and put the leftover juice and veggies on top and enjoy!!
