Cucumber Tomato and Feta Salad!
Mmm, nothing is better for this prego lady than cucumbers and fresh tomatoes. Okay, I could add cherries, watermelon, peaches, and water to the list, but if I want something savory this is what I’ve been reaching for this summer.
It’s a fresh and delicious light salad that would be great for any barbeque, and it makes my heart sing! LAAA!
Cucumber Tomato and Feta Salad
1 large cucumber, sliced
1 medium tomato or a handful of cherry tomatoes, diced
2 green onions, diced
1/3 cup of olive oil
1/4 cup of crumbled Feta Cheese
2 T Red Wine Vinegar
1 T of Greek Seasoning
Cucumber Tomato and Feta Salad
Instructions:
Dice all your veggies. In a separate bowl combine olive oil, vinegar, and Greek Seasoning. Drizzle over the top of your diced veggies, and sprinkle feta on top.
This looks delicious and I will definitely be making it when I have an abundance of cucumber and tomatoes from my garden.
You won't regret it!
I was just writing up a grocery list for this recipe, and I'm wondering what Greek seasoning is and where do I find it.
What a lovely, refreshing summer salad! Sharing! Thank you for being a part of the Hearth and Soul hop.
