Bubble up Enchilada Bake
Bubble up Enchilada Bake is lip smackin’ good! It’s so easy to make and it will leave you wanting more.
Miss 22 year old has been on a enchilada kick lately. I don’t mind cooking for my daughter when she is going to school and working, I especially love suggestions what to make for dinner, so I don’t have to make up my mind. Enchiladas are so full of flavor and a quick meal, which makes life a little easier on a busy day.
This recipe has a little bit of a twist…instead of the tortilla shells, you use biscuits! You heard me right, biscuits!!! I honestly, think I like it better this way!
TIPS AND TRICKS
BISCUITS: I used a can of Pillsbury Grands, but any biscuit would do. I suggest cutting them in bite size pieces, so they will cook more evenly.
CHEESE: I love Mexican blend cheese from Costco for this, but again, use what your family loves. A sharp cheddar would give it a little zip!
PROTEIN: If you aren’t a fan of hamburger, you can substitute it for chicken, turkey or even sausage.
STORAGE: This will stay good in your fridge for up to 3 days, if stored in an airtight container.
ADD INS: Throw in a can of corn, different kind of beans, or olives to take it to another level.
Bubble up Enchilada Bake
Ingredients
- 1 lb. ground beef
- 1 small diced onion
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (10 oz.) can enchilada sauce
- 1 cup chicken stock
- 2 Tablespoon flour
- 1 (16 oz.) can refrigerator biscuits
- 1 small can green chilies
- 2 1/2 cups shredded Mexican Cheese blend ( add more if you love cheese)
- salt and black pepper, to taste
Instructions
- Preheat oven to 350°F and grease an 8x11-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, season ground beef with onion, salt and pepper and brown until no longer pink. Drain fat, if needed. Coat the meat with flour and combine well.
- Stir in enchilada sauce, chicken broth and bring to a boil, or until it thickens. Lower the heat, and add the black beans, green chilies and pour mixture into baking dish.
- Cut each biscuit into bite size pieces and add to ground beef mixture. Gently stir to combine, making sure biscuit dough is arranged evenly across the dish.
- Bake until biscuits are cooked through, about 20 to 25 minutes. Top with cheese and return to oven for 10 minutes more. Let sit 5 minutes before serving. Enjoy!
