Frito Corn Salad
You can’t go wrong with a dish that is filled with corn, green peppers, red onions and crunchy Fritos! It’s the perfect side dish for any gathering.
Memorial Day is just around the corner! That means it’s time for Summer BBQ’s, potlucks and fast family dinners. This will be the star of your feast.
It’s a little different from the old standby salads and is so easy to make!
Frito Corn Salad
TIPS AND TRICKS
COLOR: You can use both red and green peppers to add more color to your salad.
FRITOS: You can make the salad ahead of time but I suggest that you add the Fritos right before you serve the salad.
CORN: You can use can, fresh or frozen corn. Please make sure to drain the liquid properly, so your salad isn’t soggy.
PROTEIN: Go ahead and add chicken or turkey to this salad. It will just take it up a notch.
Frito Corn Salad
Ingredients
- 2 cans of corn, drained
- 2 cups grated cheddar cheese
- 1 green pepper diced
- 1/2 cup red onion finely diced
- 1 cup mayonnaise
- 1 Tablespoon taco seasoning
- 9 ounce bag Fritos crushed (or Chili Cheese Fritos)
- salt and black pepper, to taste
Instructions
In a large bowl, combine corn, cheese, diced bell pepper and onions. Stir well.
Then add in mayonnaise and taco seasoning. Stir until thoroughly combined.
Season with salt and pepper
Just before serving, stir in crushed Fritos so they stay nice and crunchy.
