Frosted Lemon Cookies
A pocket full of sunshine in one little cookie! Tangy but sweet adds up to perfection.
I have always loved lemon in my Diet Coke but haven’t loved lemon desserts. Little by little I have become a big fan of lemon desserts. Cookies have always been my favorite dessert! You combine the two and nothing is better.
I just came to the realization that I’m not a big fan of Crumble. I know, I know, I’m crazy!!!! lol! I just love homemade cookies!
TIPS AND TRICKS
DO I CHILL THE COOKIE DOUGH? No! With this recipe, the cookies won’t go flat, but I don’t think it will hurt it if you want to make it ahead of time.
FRESH LEMONS? I love to fresh lemon but it’s okay to use the bottle lemon juice.
I WANT THEM YELLOW: Add a couple drops of food coloring to your frosting to add a splash of color!
FREEZE OR NOT TO FREEZE: You can freeze these cookies in an airtight container up to 3 months. You can also store them in an airtight container at room temperature up to 3 days.
Frosted Lemon Cookies
Ingredients
- INGREDIENTS
- 1 1/4 cups white sugar
- 1 cup butter, room temperature
- 2 eggs
- 4 1/2 cups flour
- 1/2 cup sour cream
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cream of tartar
- 3 tablespoons lemon zest
- 3 tablespoons lemon juice
- FROSTING
- 3 to 4 cups powdered sugar (depending the consistency you want)
- 3 tablespoons lemon juice
- 3 tablespoons lemon zest
- 1 stick of butter
Instructions
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
In a bowl, cream together sugar, sour cream and butter. Add the eggs, lemon zest and juice.
Add flour, baking soda, baking powder and cream of tartar. Stir.
Form dough into golf ball size and place 2 inches apart on cookie sheet. Bake 10-12 minutes, until tops are cracked and just turning color.
FROSTING
In a large bowl, cream together the powder sugar and butter until smooth. Gradually mix in the milk, lemon zest and juice with an electric mixer until smooth and stiff, about 5 minutes.
Notes
You can flatten the cookie, if you like! Make your balls a little larger and spread them apart on the cookie sheet. Take a glass, spray it with cooking spray, and dip into sugar. Gently press on the cookie ball. Add 2 minutes to cooking time because there is more dough.
