Ham and Cheese Bread Pudding

My husband loves bread pudding! When we go out for dinner and they have it on their menu, he has to order it. Bread pudding makes me think dessert. This is a savory spin to a dish that you think you know.
This would be perfect for course, breakfast or brunch but would be a nice change for dinner. Heck, you served this for guests, they would love you forever! I especially love that you only use one pan for a complete meal.
TIPS AND TRICKS
CHEESE: I used Swiss cheese but you can use Gruyere, cheddar instead. I love the Swiss because it brings such a good flavor to the casserole.
MAKE AHEAD: This is a perfect recipe to make the night before but if you don’t it will still be so delicious.
STORAGE: Leftovers will stay good in an airtight container for up to 3 days. You can also freeze it up to 3 months.
VEGGIES: Add a couple of handfuls of baby spinach to give it a different twist. Bell peppers, mushrooms or zucchini would be a lovely addition.
LOVE SPICE? If you love a little kick, add a pinch of red pepper flakes or a diced jalapeno pepper.
Ham and Cheese Bread Pudding

Ingredients
- 1 loaf French bread, cut into 1-inch cubes
- 3 cups shredded Swiss or Gruyere cheese
- 2 cups diced ham
- 4 eggs
- 1 1/2 cups milk
- 1 cup half and half
- 3/4 cup sour cream
- 1 Tablespoon Dijon mustard
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 small red onion, cut into 1/4 inch wedges
- 1 red apple, cut and peeled into 1/4 inch pieces
Instructions
- Preheat oven to 350F. Cover baking dish with cooking spray and set aside.
- In a large bowl, whisk together the eggs, milk, half and half, mustard, onion powder, salt and pepper. Add the bread and allow to sit, tossing occasionally, for 5 minutes.
- Fold the onion, apple, ham, and cheese into the bread mixture. Transfer the mixture to the prepared baking dish. Bake until set and insert a knife in the center comes out clean (cover with foil if it browns too quickly), 45-50 minutes. Serve warm.
