Ham Fried Rice One Pot Wonder
My kids LOVE rice. So. Much. I like it too, because it’s quick and easy, and CHEAP!
I also HATE doing dishes. Who doesn’t? This dish solves that problem because it all goes into one pan, tastes delicious. and takes minimal effort.
Ham Fried Rice
2 cups Chicken Stock or Broth
1 cup of rice
3 cloves of garlic
1 cup of diced ham
2 cups of frozen vegetables
1 T of olive oil
3 eggs
Directions: Sauté crushed garlic in olive oil until fragrant.
Add 2 cups of stock to the pan.
Add 1 cup rice and bring it to a heavy boil. Cover and cook for 15 minutes on very low heat.
Open lid adds 2 cups mixed veggies, ham, and beaten eggs. Stir until combined. Cover and remove rice from heat and let it sit for 5 minutes.
Voila! Dinner is done! And you only have one pot to clean!!!

We love fried rice. Don't think I've ever used ham in it, but I'm making this soon as I have some ham in the freezer begging to be eaten. =) This will be perfect.
