We are a big fan of the traditional lasagna. We have been making our family recipe for years. I was scrolling through google and I came across Ham Lasagna! I never knew this existed! Hold on to your hat, this is so good!

 

This perfect any time of the year but if you have leftover ham after Easter, this is the perfect way to use that extra ham.

 

 

TIPS AND TRICKS

 

  • NOODLES: I used the traditional lasagna noodles this time but I have used the oven ready ones before and they work great!
  • HAM: Leftover ham is great for this! Just dice it up and make sure you have 3 to 4 cups. If you don’t have leftover ham, the store has prepackaged diced ham that you can use.
  • CHEESE: I used the full fat cottage cheese but low fat would taste just as good. I love me some Parmesan and Mozzarella but go a little crazy, and substitute Monterey Jack for Mozzarella.
  • MAKE AHEAD OF TIME: You can make this ahead of time. Just make sure to bring it to room temperature.
  • LEFTOVERS: Leftovers will stay good up to 3 days. You can freeze this up to 3 months.

Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 1 (8-ounce) package white mushrooms, sliced
  • salt and pepper
  • 3 tablespoons flour
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 tablespoon chopped fresh parsley
  • a pinch of crushed red pepper flakes
  • 2 1/2 to 3 cups diced ham
  • 2 cups cottage cheese
  • 2 large eggs
  • 2 cups spinach
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 teaspoon black pepper
  • lasagna noodles, cooked according to package directions
  • 2 cups shredded Mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees and grease a 9x13-inch or slightly smaller baking dish.
  2. Melt butter in a large nonstick skillet over medium-high heat. Add onion and mushrooms and cook 5 minutes, or until onion is soft and mushrooms are lightly browned.
  3. Sprinkle flour over onions and mushrooms. Stir and cook for 1 minute, being sure to mix the flour in well.
  4. Gradually whisk in milk. Bring to a simmer. Once thickened, add sour cream and whisk until melted and blended in.
  5. Add parsley, red pepper flakes, and ham. Remove from heat and season to taste with salt and pepper.
  6. In a medium bowl, stir together cottage cheese, eggs, Parmesan cheese, and pepper.
  7. Spread about 1/2 cup of ham sauce in bottom of prepared baking dish.
  8. Lay 3 lasagna noodles side by side.
  9. Spread 1/2 cottage cheese mixture on top of noodles. Put a layer of spinach.
  10. Spread 1/3 of the ham mixture on top of cottage cheese.
  11. Sprinkle on 1/3 of shredded Mozzarella Jack cheese.
  12. Lay 3 more noodles down and spread with remaining cottage cheese mixture.
  13. Spread 1/2 the remaining ham mixture and 1/2 the remaining Mozzarella cheese on top.
  14. Finish off with remaining 3 noodles and the rest of the ham mixture, and the remaining shredded cheese.
  15. Cover baking dish with foil.
  16. Bake 30 minutes. Remove foil and bake another 15 to 20 minutes.
