I love pasta, especially Alfredo, it’s a problem when I have health goals. I am obviously not perfect at this, but I’m trying to make some lifestyle changes and it’s a day at a time. Now, you need to use at least 2% fat cottage cheese if not full fat.

When baking you want to make sure that it doesn’t curdle when in the oven. I loved this recipe because it was quick and easy!

 

High Protein Chicken Alfredo Bake

Ingredients

  • 2 cups chopped baked chicken or shredded rotisserie chicken
  • 10 oz Banza pasta
  • 1 pack frozen broccoli, thawed
  • 300 grams 2% cottage cheese
  • 36 grams parmigiano-reggiano
  • 36 grams pecorino romano
  • 3 laughing cow cheese wedges
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon juice
  • 1 teaspoon parsley
  • 1/4 cup 2% milk
  • salt and pepper to taste
  • 1 1/2 panko 
  • 1 tablespoon olive oil

Directions

  1. Preheat oven to 375 degrees.
  2. In a blender put in the cottage cheese, and all the cheeses, garlic, lemon juice, milk, parsley and salt and pepper to taste. Blend for 2 mins or until smooth.
  3. Meanwhile, cook your noodles to al dented according to noodle directions. I used regular noodles this time but would normally use banza noodles.
  4. Once noodles are cooked, strain the water and stir in the Alfredo while the noodles are still warm. Then stir in the broccoli and chicken.
  5. Dump the mixture into a greased 9×9 dish
  6. In a bowl mix, mix together panko and olive oil then put on top of the casserole.
  7. Bake for 20 min or until warmed through and panko is browned.
