Jacketed Potato
Jacketed Potato! This was an attempt to copy the Ruby River jacketed potato but really it tastes close but I would definitely never say it’s a copycat. However, it tasted super delicious!
We were trying to figure out some new sides to go with all those delicious steaks we got from our good friends at Jones Creek Beef! They literally have the best steak you can eat, but now our sides need to step it up because our steak tastes so great!
Jacketed Potato
Ingredients
2 baked potatoes
20 saltine crackers, finely ground
2 cups of kettle chips, finely ground
1/2 cup buttermilk
1/4 cup flour
1 egg
salt and pepper to taste
1/4 teaspoon cayenne pepper
Directions
1. Bake the potatoes until soft. 350 degrees for about an hour.
2. Mix together ground crackers, kettle chips. In a separate bowl whisk together buttermilk, salt, pepper, cayenne, and egg.
3. Coat the potatoes with flour and then dredge them in the buttermilk mixture. Last press the potatoes in the cracker/chip mixture.
4. Bake at 450 degrees for 8 minutes, then flip and bake for another 8 minutes.
