New York Strip Steak with Asparagus and Chimichurri Sauce
Tonight I am going to share one of my FAVORITE recipes with you! My kids even loved this recipe and kept asking for more asparagus! It’s delicious I tell you, and the great thing about the Chimichurri Sauce is that it goes with pretty much any grilled meat. You can also use it as a salad dressing. MMMMMM, I’m salivating just thinking about how yummy it is.
Chimichurri Sauce is usually used for grilled meats and is made with any combination of green herbs. I heard there is also a red sauce version, but I’ve never tried that.
For our Chimichurri Sauce we used the following;
1 cup Olive Oil
1 teaspoon Kosher salt
3 Cloves of Garlic
5 Sprigs of Thyme
1 Bunch of Basil
1 Bunch of Oregano

Pull the leaves of the herbs away from their stems and add them to the garlic, salt, and 1/2 of the olive oil. I used my Ninja to pulse all the ingredients together. I add just enough oil to get it to blend and then I add the rest of the oil and allow it to meld together while I get cooking my steak.
When I cook the steak I rub some kosher salt on it, let it get to room temperature, slap it on a hot grill, and then drizzle a little sauce over the top. I like my steak medium rare so I cook it for about 4 minutes on each side. Delicious!
New York Strip Steak with Asparagus and Chimichurri Sauce
For the asparagus, I simply wash it, spread it out on a cookie sheet, drizzle some Chimichurri sauce, toss, and broil it at 375 degrees for 12 minutes.
Give this stuff a try! You will have a lot of sauce left over, which is great since it will keep in the fridge for a while. The olive oil solidifies, so I just set it out on the counter until it comes to room temperature.
Don’t be afraid to use your own combination of your favorite herbs. If you don’t like some of the herbs I chose, just leave them out! It’s totally up to you and your taste buds. It’s also great with Italian flat leaf parsley as the base, but our store has been out of that the last two times I’ve been there. There are NO RULES! Make it your own!
