Yes, here we go again with another easy 30 minute one-pot dinner . Life is busy, no matter your situation. Dinner doesn’t need to be difficult too!
Pasta might be the basic food we all go back to whenever we have no idea what else to cook, but how about we take it to the very next level this time? And up its nutritional value by adding some ground beef, vegetables and cheese to make a super delicious, comforting and filling dish that will knock everybody’s socks off.
Bonus point, we only have one pot to worry about, so no fuss, and hardly any effort here. And I can guarantee you, even those fussy little ones will eat up and ask for seconds.
EXTRA TIPS:
- This recipe freezes well. You can always make a batch of sauce ahead of time or even double it.
- If you want more sauce, you can add a full cup of cream.
- Baby spinach would be a great addition to this recipe. Make sure to add it to the end, because it only needs to cook a few minutes.
One Pot Hamburger Pasta
INGREDIENTS
- 1 Tbsp. olive oil
- 1 lb. ground beef
- 1 small yellow onion diced
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 2 cloves garlic minced
- 1 tsp. Italian seasoning
- 3 cups beef broth
- 8 oz. (2-1/2 cups) small pasta
- 3/4 cup heavy cream
- salt and black pepper to taste
- 1 1/2 cups shredded Mozzarella
- 1 cup Parmesan, shredded

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook about 3 minutes, crumbling as it cooks.

Add onion, green pepper, red pepper and cook, stirring frequently until soft, about 5 minutes. Stir in garlic and Italian seasoning. Cook until fragrant, about 1 minute.

Whisk in beef broth. Bring to a boil.

Stir in pasta. Cover and reduce heat to medium-low. Stir occasionally until pasta is tender and sauce has thickened slightly, 10-12 minutes.

Remove from heat. Stir in heavy cream. Season with salt and pepper, to taste.

Stir in cheeses until melted, about 2 minutes.

Sprinkle with freshly chopped parsley, if desired.
