Oreo Avalanche Birthday Cake Idea

These last few weeks have been some of the busiest we’ve had in a LONG time! My husband is a financial planner and he recently started managing and training a few new people, so he’s been traveling all over the West to different appointments. Including many weekends in California…we’re in UT.
Plus, he just got a new calling in our church to serve in the bishopric. Which basically means he volunteers to organize and lead a ward (group) of our church. That has made him gone even more!
I’m crazy and decided this would be the perfect time to expand Lou Lou Girls and add a store! I’m really excited about it, but it’s just made our lives THAT much more hectic.
Let’s not even mention the fact that we have 4 kids and they’re all involved in something. Well, except for the baby. She’s just involved in making my life a tornado because she likes to empty every drawer and undo all the cleaning I’ve done in a matter of minutes.
So, yes, like most families, we are busy. Needless to say, I made this cake in December for my friend’s daughter on her birthday, and I’m just getting around to posting about it.
I love this cake because it’s super easy to make. I just used a box cake mix, following our tips to keep the cake from sticking in the pan. Then I used a Swiss Merengue frosting recipe… I’m still working on that… Buttercream would work just fine, or even store-bought frosting.
The point is though, that the frosting doesn’t even need to be smooth because you top the cake with ganache, i.e…. melted chocolate with a little bit of butter added, and then push crushed Oreo’s on the base of the cake.
The shards of chocolate are simply melted chocolate poured onto a silicone baking sheet, and swirled together. Then carefully cut to make triangles.
That’s it! Whole Oreos garnish the top of the cake, and gently press those chocolate triangles in, with a little dusting of crushed Oreo’s.
