Pineapple Spiderman Cake
When you have a five year old who demands a Pineapple Spiderman Cake, you deliver. His excitement did not disappoint!
Grey loves Spidey and His Amazing Friends, and demanded to have all 3 on his cake. This is one of the easiest cakes we’ve done but we loved doing all 3 of the friends! Grey was so excited!
He requested a pineapple cake and I was a little weary about it but it was super good! I would recommend doing a good pineapple butter cream to give a little more pineapple flavor!
Ingredients
- 1/2 cup butter
- 1/4 cup sour cream
- 1 1/2 cups granulated sugar
- 3 eggs, room temp
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups all purpose flour
- 2 cups crushed pineapple with juice (1 540ml or 20 oz can)
Directions

Preheat oven to 350 degrees F and lightly grease a two 8″ cake pans.

In a large bowl, whisk together the butter, sour cream and sugar.

Add eggs and vanilla and whisk until smooth.

Whisk in baking powder, baking soda and salt until completely combined.

Pour batter into prepared pan and bake for 30-40 minutes, covering the cake with foil at 20-25 minutes if darkening quickly (once your cake is light golden brown, you want to cover it to prevent further browning)

Let cake cool to room temperature before frosting.
