Poor Man’s Burnt Ends
Poor Man’s Burnt Ends are the cheap alternative to buying an entire brisket, not to mention they taste absolutely delicious.
We love to smoke at our house, and brisket is one of our favorite things to buy and eat. The cost of brisket and all meat has really gone up, which I’m sure you are all aware of! I have bought a few roasts from Costco and have cut them into quarters because in our house we only eat so much.
My boys typically like meat but sometimes we have to trick them to eat what we’ve cooked. They are so picky but will eat anything we call steak or chicken, so everything is steak or chicken. This was a simple recipe that didn’t take much effort or dirty too many dishes. I recommend this recipe. I also made rolls yesterday to go with these and we made burnt end sandwiches.
Ingredients
- 3 lb. chuck roast
- mustard
- kosher salt
- Sweet Rub o’ Mine
- Favorite Barbecue sauce
- butter
- honey
- brown sugar
Directions
- Preheat the smoker to 250 degrees F.
- Pull out your chuck roast out of the fridge, if it’s thicker than 3 inches then cut in half like you would a bun or roll. Rub mustard on the beef as a binder, season liberally with kosher salt and then Sweet Rub O’ Mine or your favorite rub.
- Place beef on the top shelf of the smoker and smoke until it reaches 165 degrees F, about 3 to 4 hours.
- Then pull it out of the smoker and wrap in foil or paper, place back on the smoker.
- Once it gets to 195 degrees, another 1 to 2 hours, pull off the smoker and let rest for 15 to 20 minutes.
- Cut into 1 inch squares and place in a foil pan with about 4 tablespoons of butter, 1/3 cup brown sugar, 1/3 cup of honey and 1/3 cup of your favorite barbecue sauce. Place back on the smoker uncovered for 30 minutes to an hour or until the meat is caramelized, (I used the oven so I could turn of the smoker). Serve warm!
