Pumpkin Crumble Cake
We have a few people in our family that are a little crazy about pumpkin! Since it’s almost Thanksgiving, we baby the ones that love this flavor and you know who you are!
This cake is so good! The flavor will burst in your mouth with every bite. It’s time to get your pumpkin on.

Ingredients:
crumble topping:
1/2 cup cold butter, cut into pieces
1/2 cup brown sugar
1/3 cup flour
2 teaspoons pumpkin spice
1 teaspoon cinnamon
1/2 almonds, chopped
cake:
2 teaspoons pumpkin spice
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
3 cups flour
1/4 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 cup milk
1/2 cup heavy cream
2 teaspoons vanilla
1 1/3 cup pumpkin puree
Pumpkin Crumble Cake
Directions:
- Preheat oven to 350 degrees. Line an 8×8 inch square pan with aluminum foil and spray with cooking spray.
- In a mixing bowl start by preparing the crumble topping, mix together butter, brown sugar, flour, pumpkin spice, almonds, and cinnamon until coarse crumbs form. Set aside.
- In a different bowl, you will start with the ingredients for the cake. Whisk together pumpkin pie spice, salt, baking powder, soda, and flour.
- Yes, in another bowl, cream together butter and sugars. Add the eggs, and mix until well blended. Add the milk, heavy cream, and vanilla, stir until mixed completely. Then add the pumpkin puree.
- Slowly add the dry ingredients to the wet ingredients and make sure it’s blended completely.
- Pour half the batter into the prepared baking pan. Top with half of the crumble topping and pour the remaining batter on top. Sprinkle with the remaining crumble mixture and you can add a few more almonds if you like.
- Bake for 60 to 70 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely.
I love pumpkin and looooooooooove crumbles.
