Let’s get ready for Summer! This Red White and Blue Cheesecake Salad is chuck full of delicious berries, marshmallows and nestled in a creamy cheesecake filling!

When I was growing up, the only creamy fruit salads we would have would be Orange Cream Salad and Pistachio Salad. Don’t get me wrong, they were and are delicious! Lately, we have been all about the berry cream salads. Oh yum!! It’s a party in your mouth!

With Memorial Day just a couple weeks away and the start of Summer fun, I thought we needed to break out the salads!

 

 

TIPS AND TRICKS

FRUIT: Not feeling the berries we chose? You choose your favorite fruit! It will work!

FROZEN? Frozen fruit comes with ice crystals and changes the consistency of the salad. Fresh is best for this salad.

COOL WHIP OPTIONS: If you want a lighter version, you can use the lighter version of Cool Whip and Cream Cheese.

Ingredients

  • 3.4 oz Cheesecake flavored instant pudding
  • 8 oz Whipped Cream Cheese
  • 8 oz Cool Whip
  • ⅔ cup milk
  • 10 oz mini marshmallows
  • 3 cups sliced strawberries
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Instructions

  1. In a medium bowl, whisk together the pudding mix, whipped topping, cream cheese, and milk until smooth.

  2. Add the marshmallows to the cheesecake dressing and stir to evenly mix.

  3. Gently mix the berries, into the cheesecake mixture. Ripe strawberries and raspberries can break apart easily. Mix slowly and gently.

  4. Cover and place in the fridge to chill for an hour. Cheesecake salad can be made 48 hours in advance. Store in fridge till ready to serve.

What I really love is the mention of salads you grew up eating like orange creme, pistachio and your Grandma’s Potato Salad. I made the potato salad because it looked just like the one my grandma made and it was. I was so happy because she never recorded her recipes. Thank you!
