Slow Cooker French Dip
Slow Cooker French Dip Sandwiches are a quick and easy dinner for anyone who wants dinner ready to go when they get home.
My New Year’s resolution this year is to eat out less. We love to cook, but with working full time.
It’s hard to want to cook anything when I start thinking about the dishes and the cleanup. So, what we are going to do is do recipes during the week that are less mess!
This was the one I chose to kick off the New Year. Matt loves a good French Dip sandwich and so do I.
Slow Cooker French Dip
Ingredients
- 1 beef chuck roast (about 2 1/2-pounds), trimmed of excess fat
- Kosher salt and freshly ground pepper, to taste
- Olive oil for searing
- 1 large onion chopped
- 6 garlic cloves, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- 2 1/2 cups beef broth
- French bread
- Swiss cheese slices
Directions
- Sprinkle the beef with salt and pepper. Heat the olive oil in a pan at medium-high heat and the beef so that it is brown on all edges. Put the beef in the crockpot and add the onions, garlic, Worcestershire sauce, tomato paste, and broth.
- Place the roast in the slow cooker and turn the slow cooker to its lowest setting. Cover and cook on low for 4 hours, until the meat begins to fall apart with the pull of a fork.
- Remove the meat from the slow cooker and slice the beef into 1/4- inch slices or shred it, depending on your preference. Ladle off the fat from the top of the jus and discard.
- Reserve the jus from the pot. Slather both sides of the French bread
with the cheese and then I broiled the bread so the cheese was melted and the bread toasted. Top with some of the beef and the onions from the pot. Serve with a side bowl of the jus.
