Slow Cooker Ham and Potato Soup
It’s getting colder and it’s slow cooker soup season! We had leftover ham from Christmas day and so we made Slow Cooker Ham and Potato Soup!
We have been sick the 10 days and haven’t felt like cooking a ton and my solution when that is the case is always to make crockpot meals. We did smoke a ham on Christmas that was fantastic but since the kids were sick and insisting on snuggles I did not get a good picture for you guys!
We’ll do it again though because we loved it! The nice thing about cooking a nice big ham on Christmas is that we had a bunch of really good leftovers! With that we made this Ham and Potato soup. I did not add cheese because I didn’t want it to be too rich for the boys and for some reason they really don’t want cheese lately. I topped mine with cheese and it was great! Enjoy!
Ingredients
- 3 1/2 cups of chopped potatoes
- 1/3 cup finely chopped onion
- 1 1/2 cups of chopped ham
- 4 cups of chicken stock
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 5 tablespoons butter
- 5 tablespoons flour
- 2 cups of milk
Directions

Stir all but milk, flour, and butter into the slow cooker. Cook on low for 6-8 hours, check the tenderness of potatoes.

Minutes before serving, melt butter in a saucepan, add flour and gradually add milk, stirring constantly over med heat until thick.

Stir mixture into slow cooker.

Let cook 15-20 minutes more.

You can top with bacon, cheddar cheese or sour cream!
