Smashed Potatoes
Smashed potatoes is what would happen if mashed potatoes and fries had a baby! It’s the perfect combination. It will become your favorite side dish!
I haven’t met a potato I didn’t love! So when you can combine two into one, it’s perfect! It’s amazing to me that if you change it up the preparation a little, it comes out a completely different potato!
This is the perfect side dish for any dinner, potluck or even the backyard bbq!
TIPS AND TRICKS
AIR FRYER: You can finish these in the air fryer. You will still need to boil them and smash them but then you can complete the task at 4oo degrees for 15 to 20 minutes. Please make sure to check on them half way through their cooking process.
CRISPINESS: For the best crispiness, let them dry a minute before smash them.
VARIATIONS: Instead of the toppings that we have used, you can add pesto, feta, garlic. Let your imagination go wild!!
Smashed Potatoes
Ingredients
- 2 pounds baby yellow potatoes
- coarse salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- 4 to 6 slices bacon, cooked and diced
- ⅓ cup sour cream
- 2 tablespoons chopped fresh chives
Instructions
Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
Place potatoes in dutch oven and cover with cold salted water about an 1 inch. Bring to a boil and simmer until just tender, about 15 to 30 minutes; drain well dry, and let cool slightly.
Place potatoes onto the prepared baking sheet. Using a flat dry measuring cup or glass, carefully smash the potatoes until flattened but still in one piece. Brush with olive oil; season with salt and pepper, to taste.
Place into oven and bake for 30-35 minutes, or until golden brown and crisp. Sprinkle the tops of each potato with cheese; place into oven and bake until cheese has melted, an additional 2-3 minutes.
Top each potato with sour cream, bacon and chives.
Serve immediately.
