Soft Caramel Popcorn
Soft Caramel Popcorn! Do you know those recipes that you have that if you lost them your family would cease to exist? I know that’s a little dramatic but this recipe is a staple in my home. It’s been on the blog ever since we started the blog. When we transferred our site to WordPress, we found that this is one of our gems that didn’t make it!
The sharing of this recipe, of course, is to bring you the very best recipes but it’s also a little selfish. We use this recipe so many times, especially this time of year, that WE need to find it quickly!
I love caramel popcorn!!!! Matter of fact, when most women love chocolate, my go-to is caramel! This recipe is soooo good and it’s easy to prepare. Great for enjoying at home and everyone loves it at any kind of party!
Last night, it was my daughter’s birthday. Instead of a birthday cake, she wanted caramel popcorn and chocolate-covered strawberries. My cute grandson, Cooper, snuck into the kitchen before dinner and grabbed a big handful of this goodness. When I told him he needed to wait until he ate something good for him, all I got was a big smile and a sheepish laugh as he walked away.
What better way to show love to your neighbors this holiday season but with a large bag of soft Caramel Popcorn! Trust me, you will be everyone’s favorite!
Soft Caramel Popcorn
Ingredients:
3 bags of microwave popcorn, popped
½ cup (1 stick) butter
1 cup brown sugar
1 cup light corn syrup
1 can sweeten condensed milk
Directions:
Pop the popcorn according to directions. You are going to want to make sure to get all the unpopped kernels out. Using your hands transfer the popcorn to a clean bowl. This is best done in small batches.
In a large saucepan combine butter, brown sugar, and light corn syrup until everything has melted and the mixture comes to a boil.
Reduce to low heat and add the sweetened condensed milk. Stir continuously for about 5 minutes. The longer you stir the firmer your caramel will be, so don’t stir too long or you will make a caramel lollipop.
Pour caramel over the popcorn and stir until its mixed well. It will feel like it’s not working but keep stirring and the caramel will coat the popcorn.
Great things to add to your popcorn would be nuts, M&M’s or chocolate chips.

Oh goodness now this sounds like my grandma’s popcorn recipes, it was quite the undertaking when she made popcorn balls. But at that time she used thick whipping cream and butter, so good.
