Spanish Rice
I don’t know about you guys, but we LOVE rice at our house. Matt is always telling me we need to buy a big bag of rice at Costco, I just don’t know where we would store it. Also, I didn’t realize there were so many types of rice. Matt insisted that we buy jasmine rice this time.
I think they all taste the same but he says it has an aromatic quality. Not sure what that means. Anyways, what is enchilada’s with out a little Spanish rice?! Here is our recipe!! Click here for the printable!
Spanish Rice
Ingredients
1/4 cup of oil
1/4 cup chopped onion
3 cups uncooked jasmine rice
4 1/2 cups chicken broth
2 cups chunky pase picante salsa (we used medium)
Spanish Rice
Directions
1. Heat oil in a large pot over medium heat. Stir in onion and cook until it is tender and translucent.
2. Mix rice into pot, stirring frequently. When rice starts to turn brown, stir in chicken broth and salsa. Bring to a boil and then reduce heat to low and cover. Simmer on low for 20 minutes, until the liquids has been absorbed.
This rice looks so good! (and so did the enchiladas.) I think I've found my supper plans for tonight. 🙂 Thanks!
