Strawberry Cheesecake Brownies

Strawberry Cheesecake Brownies! I’m a big lover of cheesecake! I prefer it over cake or pie any day of the week! I have a Strawberry Dessert that everyone love and we have called it a “salad” so we could have two desserts and not feel guilty.
A few years ago, I decided to get a little crazy and combine our favorite with chocolate. That is how this recipe was born! I took it a step further by making it into a sheet pan celebration. More yumminess to enjoy!
This strawberry cheesecake recipe is cool and creamy!! The chocolate brownie crust is the perfect compliment to the easy strawberry cheesecake.
Strawberry Cheesecake Brownies
Ingredients
- BROWNIES
- 3 sticks butter
- 1 pound milk or semisweet chocolate
- ½ cups granulated sugar
- 1 cup brown sugar
- 5 large eggs
- 1 ½ tablespoons vanilla
- 1 ⅓ cups flour
- ½ tablespoon baking powder
- ½ teaspoon salt
- 1 to 2 cups chocolate chips
- Strawberry Cheesecake
- 1 large tube of Cool Whip
- 2 12 ounce whipped cream cheese
- 2 1/2 cups powdered sugar
- 2 teaspoons vanilla
- 2 large cartons of Strawberries sliced
Instructions
BROWNIES: Preheat the oven to 350 degrees F. Lightly grease a large, rimmed baking sheet (12X18-inches) and set aside.
In a large microwave-safe bowl, combine the butter and chocolate; microwave in 1-minute intervals, stirring in between, until the mixture is melted and smooth (don’t overheat, it should be slightly warm, if at all). Add the sugar and stir until combined.
Whisk in the eggs and vanilla, and mix until large bubbles pop at the surface – it will go from looking slightly curdled to really glossy and thick so keep stirring until you see the change. In a separate smaller bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the batter and mix once or twice. With dry streaks remaining, add the chocolate chips and mix until well-combined.
Spread the batter evenly in the prepared pan.
Bake for 25-30 minutes until edges are set but the middle is still slightly gooey.
- CHEESECAKE MIXTURE: Beat the softened cream cheese for two minutes. Add the powdered sugar and vanilla and mix until smooth. Fold in two cups the whipped cream or non-dairy whipped topping.
- Spread the cheesecake mixture over the crust and refrigerate for at least one hour, or overnight.
- Add sliced strawberries to top the cheesecake.
