Strawberry Shortcake Poke Cake

I love, love recipes in the Summer that include strawberries! I don’t know what it is but it seems to scream Summer, fun, family and memories. We were celebrating my son, Ben’s, birthday, yesterday. I let them request certain dishes for their birthday dinner.
Ben actually asked for cheese enchiladas covered with steak (from me and his brother, Zac), Banana cinnamon rolls (from Cassie, and a Corn salad (from his sister, Jessica). It turned out so amazing!
You are probably wondering how this cake was part of this story, well, I have been trying to make it for weeks! With all the Summer celebrations, I just didn’t get around to it! So I decided I was going to make it just in case we didn’t have enough dessert! You never have enough dessert, right?
I was glad I did! It is so easy to make and boy is it so GOOD! I would recommend this recipe for any celebration you have planned or just an ordinary day that you need something yummy!
Strawberry Shortcake Poke Cake
Ingredients
- 1 box of white cake mix or yellow + ingredients list on packaging
- 2 cans (21 ounce cans) strawberry pie filling
- 8 ounces whipped topping thawed (1 tub)
- 3 to 4 cups strawberries sliced
Instructions
Prepare the cake in a 9×13-inch pan according to the package directions. Allow the cake to cool to room temperature. Use a wooden spoon handle to poke rows of holes an inch apart over the cake.
Spread the pie filling over the surface of the cake using a rubber spatula to gently press the filling into the holes.
Spread the whipped topping over the cake and refrigerate for at least an hour. When ready to serve, arrange the sliced strawberries on top of the cake, slice, and enjoy.
