To be honest, I usually look at recipes for stuffed pepper, and as much as they look delicious, I’m not a fan. I kept seeing recipes that had the same flavor profile as our recipe and I kept convincing myself, it wouldn’t be a winner. I talked to my husband about it and he kept telling he wasn’t a fan, either. I finally decided to give it a try and see what I could come up with…….I’m glad I did!

IT IS SO GOOD! Yes, my fussy husband loved it too! It is so easy to put together and the flavor will make your mouth happy! How can you go wrong with a recipe like that? 

 

 

What is the difference between bell peppers?

The main difference between the colors of bell peppers is the level of maturity. Green bell peppers are the least mature and tend to be more bitter. Red bell peppers are the most mature, meaning they have been left to grow on the vine longest.

Which bell pepper is the sweetest?

Red bell peppers take the lead on levels of sweetness. However, I personally find yellow and orange to be just was sweet and add a beautiful spectrum of color that is visually appealing. 

 

 

Teriyaki Chicken Peppers

Teriyaki Chicken Peppers

Ingredients

  • 2 large bell peppers (any color), halved lengthwise and seeded
  • 1 lb. cooked chicken, cut into bite-sized pieces
  • 1 tbsp. olive oil
  • 1 cup cooked brown rice or white
  • 1 cup fresh pineapple chunks
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper (any color), diced
  • green onions, diced
  • For the Teriyaki Sauce:
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp. rice vinegar
  • 1 tbsp. cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 2 to 3 clove garlic, minced

Instructions

  1. Preheat oven to 375°F
  2. Prepare the peppers: Place pepper halves cut-side up in a baking dish.
  3. Make the teriyaki sauce: In a small saucepan, whisk together soy sauce, honey, rice vinegar, cornstarch, sesame oil, ginger, and garlic. Heat over medium heat, stirring constantly, until the sauce thickens. Remove from heat.
  4. Combine the filling: In a skillet, Add red onion, and diced bell pepper to the skillet and cook for 2-3 minutes, until slightly softened. Stir in chicken.
  5. Stir in the cooked rice and 1/2 cup of the teriyaki sauce. Mix well.
  6. Stuff the peppers: Spoon the chicken and rice mixture into each bell pepper half.
  7. Bake: Pour the remaining teriyaki sauce over the stuffed peppers. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and top with pineapple, and bake for another 10-15 minutes, or until the peppers are tender.
  8. Garnish: Sprinkle with chopped green onions before serving.
