The Perfect Brownie Bites
The Perfect Brownie Bites were a hit at our Valentine’s Dinner this weekend. They are so addicting you can’t stop eating them!
Last week was so hectic I can’t even begin to describe it! I’m tired just thinking about it. At last year’s Valentine’s dinner I made over 150 cupcakes and Matt helped me by making about 75 mini handmade cannoli to put on top.
This year we decided we wouldn’t get too crazy and we would just make brownies and then top them with ice cream. They turned out too cute for words! I would have to say they were actually amazingly delicious, so I thought I would share the recipe with you.
I made them the night before and they didn’t sink or anything. The perfect brownie bites were born when I realized that they were still moist and perfectly addicting the next day!
Matt would have me tell you he used a laser cutter to cut these but he just used a rule and a pizza cutter! I’m glad there were leftovers because they were amazing!
The Perfect Brownie Bites
Ingredients
1 cup butter, melted
1/2 teaspoon salt
1/2 cup cocoa powder
2 tablespoons vanilla
2 cups of sugar
4 eggs
2 cups flour
1/2 cup Nutella
Directions
1. Preheat the oven to 350 degrees. Line a 9 x 13 pan with parchment paper.
2. In a large bowl or stand mixer combine butter, salt, cocoa, and vanilla. Mix in the sugar and then add the eggs one at a time. Add in the flour and Nutella and mix until smooth. Pour into prepared pan and bake for 21 to 24 minutes. Then remove from the oven and let it cool.
4. Cut into 1 inch by 1-inch bite-size squares, we used a ruler and a pizza cutter to get the perfect squares.
