Tortellini Lasagna
Calling all lasagna lovers! Get your fix in just minutes without sacrificing any of the flavor!
One of our favorites at our house is lasagna! It has been requested by some for their birthday dinners. It’s also a perfect meal to take to someone that is needing some love. Me and my husband even taught a couple how to make it when we were working with the Foster Care program.
I guess you get the picture, we love us some lasagna!!!! This recipe still has all the bells and whistles but in less time and less dishes! Can I get a “heck, yeah”? It always does my heart good when I can share with you amazing people something that tastes so good but saves you time!
Tortellini Lasagna
Ingredients
- 1 Tablespoon olive oil
- 1 lb. hamburger
- 1 24 oz. jar of Marinara
- 1 19 oz. bag frozen cheese tortellini or fresh
- 1 onion, diced
- 2 to 3 cloves of garlic
- 1/3 cup ricotta cheese
- 1/4 cup Parmesan cheese, shredded
- 2 cups Mozzarella, shredded
- 2 handfuls of fresh baby spinach
- salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- Heat a skillet over medium heat. Cook hamburger, and onion until browned and cooked through, and break up the meat. Add garlic and let simmer for a couple of minutes. Add sauce and reduce heat. Add tortellini and cook 5 minutes.
- In a small bowl, combine ricotta cheese, 1/2 the mozzarella, Parmesan, salt and pepper. Drop cheese mixture into sauce, and gently combine. Add spinach and gently combine.
- cover the mixture with the other half of the Mozzarella and place in the oven for 10 minutes, or until the cheese is melted and bubbly on the edges. Serve!
